Serves one person

2 cups of medium size cauliflower florets

2 cups of sliced fresh mushrooms

1 cup of fresh sliced peppers (I used sweet banana and chocolate peppers, not spicy)

1 medium thick slice of turkey breast cut into 4 or 5 strips (I use Publix Boars Head from the deli)

1/4 cup cheddar cheese

Olive Oil  (I keep a cruet of oil that has been flavored with fresh garlic)

1/4 cup of water

Baking Oil Spray

salt to taste

In a small casserole dish,(I use a small pyrex 7×5 by 1 1/2 or 3 cup dish) spray it with oil.   Put in cauliflower, mushrooms, peppers and strips of turkety  then  salt to taste, add 1/4 cup of water.

Cover with aluminum foil and bake for 1 hour in toaster oven.

Open oven and remove aluminum foil and stir, then add 1/4 cup of cheddar cheese over top evenly, put back in oven without foil and bake for 10 minutes.

Serve with fresh buttered garlic bread sprinkled with garlic salt and sprinkled with cheese toasted in oven and some fresh sliced tomatoes.

Note:   You can prep this over weekend, store in fridge until ready to use,   Just increase for larger servings

Also you can steam the cauliflower  and peppers in advance just until tender and cut the baking time to about 30 minutes
